All our research projects have been funded by competitive funding and have evolved towards the development of suitable tools for the objective determination of the sensory quality of foods, based on chemical analysis and chemometrics.

In the immediate future, we intend to develop a system to control the quality of new food products based on typical Mediterranean fruits. To this end, we are committed to establishing new contacts with researchers from all over Spain to control the production process from raw material to sale. All the agents involved in ALLFRUIT4ALL, the acronym of the project, have a proven track record in the food sector, having developed lines of research complementary to ours.
